Many years ago, I went to see the then new David Hare play, Racing Demon.

At one point in the play, one character, a bishop, mentions how much he likes fish cakes cooked in goose fat.  I think I was probably meant to think something deep and profound about out-of-touch bishops and the state of the Church of England - instead what I took away was a desire to try cooking fish cakes in goose fat for myself.

It has taken over twenty years, but I have *finally* found myself with both leftover fish, leftover mashed potatoes, and some goose fat, all at the same time.  And I can report that the bishop (or possibly David Hare) was spot on.  And spot Omnomnom.

I confess that we buy fish cakes ... I had never thought of frying them in goose fat. Must try that!

Not that we have any goose fat at the moment. There is duck fat at Yome ....
